Easy Veggie Tteokbokki - Korean hot and spicy rice cake
This is a cheat version of tteokbokki that we’ve worked out at home and it tastes really nice! This dish is usually made with anchovy stock or water. We don’t usually stock anchovy at home and didn’t want to just use water so we substituted with tomato soup to add in a little extra sweet and sour flavour profiles.
This is super quick to cook: we use large ring medium heat to simmer for 5 min and turn off to sit for a bit so the sauce is sticky. Also this is good for one of those days when you are just trying to use up leftover veg in your fridge. 👀

What You’ll Need:
- 1 pack of cylindrical rice cakes (tteok)
- 1-2 tbsp gochujang (adjust to your spice preference)
- A handful of cabbage, roughly chopped
- A few peppers (any color), sliced
- Half an onion, diced
- Half a tin of tomato soup (about 200ml)
- 1-2 tsp extra hot chili powder (optional, for a kick)
- 1 tbsp vegetable oil
- A drizzle of sesame oil
- Chopped spring onion (for garnish)
- Toasted sesame seeds (optional, for crunch)
Steps:
- Heat the vegetable oil in a large pan over medium heat and stir-fry the cabbage, peppers, and onion for 2-3 minutes until slightly softened.
- Stir in 1 tbsp of gochujang (add more later if you like it spicier) and mix it well with the veggies.
- Pour in the tomato soup—it’s the secret weapon for that sweet-and-sour depth!
- Sprinkle in 1-2 tsp of hot chili powder if you’re craving extra heat.
- Toss in the rice cakes, stirring to coat them in the sauce.
- Simmer everything on medium heat for 5 minutes, letting the sauce thicken and cling to the tteok.
- Turn off the heat, drizzle with a little sesame oil, and sprinkle chopped spring onion on top.
- Finish with a pinch of toasted sesame seeds for that nutty crunch (optional but so good).
- Serve it hot and dig in—these are best when they’re fresh and steamy!
