Garland chrysanthemum (tonghao), a handful — choose fresh, bright-green leaves

Firm tofu — 1 block

Instructions
1. Prepare the Garland Chrysanthemum
Bring a pot of water to a boil. Add the washed greens and blanch for about 1 minute, just until they turn brighter in color. Remove and cool them immediately in cold water to lock in freshness and keep the texture crisp.
2. Prepare the Tofu
Place the tofu in hot water briefly. This removes any beany smell and helps firm up the texture, making it easier to crumble later.
3. Chop & Crumble
Drain the cooled greens well and chop them finely.
Place the blanched tofu into a bowl and crumble it gently by hand into small soft pieces.
4. Season & Mix
Add the chopped greens to the tofu.
Season with a pinch of salt, 1 tablespoon sesame seeds, and 1 tablespoon sesame oil.
Mix everything thoroughly until the flavors combine perfectly.
