Authentic Chinese Stir-Fried Beef with Green Peppers - Better Than Takeout!

Authentic Chinese Stir-Fried Beef with Green Peppers (青椒炒牛肉) – Better Than Takeout!

This Stir-Fried Beef with Green Peppers (青椒炒牛肉, Qīngjiāo chǎo niúròu) is a classic home-style dish popular across China. Unlike the American-style pepper steak with thick gravy and bell peppers, the authentic version uses long green chili peppers for a fresh, vibrant heat and keeps the sauce light so the ingredients shine.

Tender slices of beef, blistered long green peppers, garlic, and a savory sauce come together in minutes. It’s spicy, savory, and packed with that signature smoky wok flavor. Serve it over steamed rice for an irresistible meal the whole family will love.

Prep Time: 15 minutes (plus marinating)
Cook Time: 10 minutes
Total Time: 25–30 minutes
Servings: 2–3

Ingredients

For the Beef & Marinade:

  • 8–12 oz (225–350g) flank steak, sirloin, or tender beef cut, thinly sliced against the grain
  • 1 tbsp light soy sauce
  • 1 tbsp water (instead of Shaoxing wine)
  • 1 tsp cornstarch
  • ½ tsp baking soda (optional, for extra tenderness)
  • Pinch of white or black pepper
  • 1 tsp neutral oil (for velveting)

For the Stir-Fry:

  • 8–10 long green chili peppers (or Anaheim/cubanelle peppers), cut diagonally into 2–3 inch pieces
  • 3–5 red chilies (adjust for heat), sliced
  • 4–5 garlic cloves, thinly sliced or minced
  • 1 thumb ginger, minced (optional)
  • 2–3 tbsp neutral cooking oil (high smoke point like peanut or canola)

Sauce:

  • 1–2 tbsp light soy sauce
  • ½ tsp dark soy sauce (for color)
  • 1 tsp oyster sauce (optional — use a suitable brand or omit)
  • ½ tsp sugar
  • 1 tbsp water (instead of Shaoxing wine)
  • ½ tsp cornstarch mixed with 1 tbsp water (slurry, optional for a light glaze)

Instructions

Marinate the Beef

Combine beef slices with soy sauce, water, cornstarch, baking soda, pepper, and oil. Mix well and let sit for 15–30 minutes in the fridge or at room temperature.

For extra tender “velveted” beef, blanch quickly in warm oil or water before stir-frying.

Prep the Vegetables

Wash and cut the long green peppers. Remove seeds if you prefer less heat. Slice garlic and ginger.

Stir-Fry the Beef

Heat your wok over high heat until very hot. Add 1–2 tbsp oil. Sear the beef in a single layer for 30–60 seconds until just browned but not overcooked. Remove and set aside.

Cook the Aromatics and Peppers

Add a little more oil if needed. Stir-fry garlic and ginger for 10–15 seconds until fragrant. Add green and red peppers. Stir-fry for 1–2 minutes until blistered and slightly charred but still crisp.

Combine Everything

Return the beef to the wok. Add the sauce ingredients and toss vigorously for 30–60 seconds until everything is coated and heated through. Add cornstarch slurry if desired.

Finish with a drizzle of sesame oil (optional).

Serve Immediately

Serve hot with steamed white rice. Garnish with sliced green onions if desired.Pro Tips for Perfect Stir-Fried Beef with Green Peppers
