Homemade Snack Bar–Style Tteokbokki Recipe

Homemade Snack Bar–Style Tteokbokki Recipe

My niece Jennifer just started college this spring.
Lately, she’s been obsessed with healthy eating — salads, smoothies, and everything “clean.”

That’s great, of course, but I couldn’t help teasing her a little.
“Jennifer, are you planning to eat lettuce forever?”

She laughed.
“I’m being healthy!”

I smiled back. “How about a little comfort food for lunch today?”

Her eyes lit up immediately.
“What are you making?”
“Tteokbokki!”

And just like that — the diet didn’t stand a chance. 😄

Homemade Snack Bar–Style Tteokbokki Recipe

🧄 Ingredients (Serves 4)

  • 500g rice cakes for tteokbokki

  • 4 sheets of fish cake

  • 4 boiled eggs

  • A bit of chopped green onion

Please prepare the ingredients like this!

🍜 Sauce & Broth

  • 3 cups broth (anchovy or vegetable)

  • 2 tablespoons gochujang (Korean red chili paste)

  • 2 tablespoons soy sauce

  • ½ tablespoon mushroom sauce

  • ½ tablespoon chili flakes

  • 1 tablespoon sugar

  • ½ teaspoon black bean paste (optional)

  • 1 teaspoon salt (adjust to taste)

When the prepared broth starts to boil —

add the rice cakes,

and the fish cakes cut into bite-sized pieces.

Then add the boiled eggs.

Simmer over medium heat for about 20 minutes.

Oh my~~

I think I should’ve thawed the frozen rice cakes at room temperature first!

This was my first time trying this brand.
I took them straight from the freezer and gave them a quick rinse under water —
and they started to crack a little~~~ 😅

But thankfully, it didn’t affect the flavor much at all. ^&^

Keep simmering for about 20 minutes,
letting the sauce reduce and thicken beautifully.

Taste and season with a little salt if needed,
then toss in the chopped green onions at the end.

Some of the rice cakes split a bit,
and the sauce looked a little messy —
but the thick, glossy tteokbokki sauce turned out exactly like something you’d get at a street snack shop!

Scoop up a generous serving into a big bowl,
sprinkle a little red pepper flakes on top,
and finish with a touch of sesame seeds~~

The smell alone was enough to bring everyone to the table.

After days of only green vegetables,
Jennifer and my daughter couldn’t stop eating.

“Wow~~ this is so good!!”

Haha! The two of them finished four servings all by themselves.

Diet plans? Totally ruined today~~??
No, no~~ let’s just call it a little break.

Because sometimes, happiness really does come in the form of a warm, spicy bowl of tteokbokki. ❤️
